4 C milk - 2% lowfat
5 whole cloves
1/2 tsp vanilla extract
1 tsp cinnamon - ground
12 egg yolks
1 1/2 C sugar
1 1/2 C rum - light color
4 C light cream
2 tsp vanilla extract
1/2 tsp ground nutmeg

Combine milk, cloves, 1/2 tsp v. extract, and cinnamon in saucepan, and heat over lowest setting 5-min. Slowly bring milk mixture to a boil. In large bowl, combine egg yolks & sugar. Whisk tog. until fluffy. Whisk hot milk mixture slowly into the eggs. Pour mixture into saucepan. Cook over medium-heat stirring constantly for 3-min. or until thick. Do not allow to boil. Strain to remove cloves & let cool for 1 hour. Stir in rum, cream, 2 tsp V. extract, and nutmeg. Refrig. overnight; before serving.

Natalie says it took her 3 yrs. to perfect this recipe. Its a bit of work to make, but well worth it. This uses cooked eggs for safety, and you can use more or less rum to taste. All her friends, ask when are you making the eggnog?
