3 cups of prawns (raw, deveined, halved)
2 red onions, diced
3 red chilies (finely chopped)
2 garlic cloves (finely chopped)
3 tbsps sesame oil
1 tbsp sambal oelek(it will do without)
1 tsp fresh ginger (finely chopped)
8.5 oz of coconut milk
a pinch of sugar
salt and pepper
chili powder
herbs for decoration

Directions:
Directions:
Sauté onions, chilies, garlic and sesame oil.

Boil down sambal oelek, ginger and coconut milk until sauce is concentrated, then add sugar, salt, pepper and chili powder.

Mix with sautéed ingredients, have prawns cook in sauce for 5- 10 minutes.

Years ago I met Doris. She's a mom of a friend of mine. Besides being one of the sweetest people I've ever met, that lady knew how to cook, no doubt! This is one of her recipes I wrote down. For those of you who are into sea food (yeeha, another pun, see - food, I'm sure you remember, it was my personal family joke growing up as a kid), this is a must!
