2 cups of bulgur or couscous
2 bunches of fresh parsley
1/2 bunch of fresh mint leaves
2 middle sized tomatoes
6 tbsps of lemon juice
chilli (dry or fresh)
salt + pepper
4 tbsps of olive oil

Directions:
Directions:
Cook bulgur or couscous with 3 cups of water, bring to the boil, cover, then turn the heat on very low and cook for 15 minutes, pour off remaining water when done.

Meanwhile chop up the parsley and mint leaves (very finely), dice tomatoes and squeeze some lemons (or use concentrate, although I recommend using the real stuff.)

Once your bulgur is done, mix in your herbs and tomatoes, then add lemon juice, chilli, salt and pepper, then olive oil.

This salad sells like hot cakes! First time I made this for guests was on Phil's B-day- we threw him a surprise party and once the buffet was opened, that salad simply vanished. The next time we made it was at our house warming party and yes, we were clever- we made more! Not recommended if you are hoping for leftovers.
