1 can cream of celery soup
1 can rotel tomatoes
3/4 cup cooking oil
1 onion, chopped
1 bell pepper, chopped
1 1/2 to 2 lbs cleaned crawfish (or shrimp)
2 cups raw minute rice
Tony Chachere's seasoning to taste

Directions:

Chop and saute all veggies in cooking oil, mix well. Combine all other ingredients. Pour into long loaf pan. Bake at 350º covered until rice is cooked, about 30 to 45 minutes.

This was given to me by my friend Marilyn Perry on October 24, 1983. She liked to make it with Shrimp. Being a Louisiana Native, I prefer crawfish.
