4 1/2 cups water
1 1/2 cups dried black beans
2 tsp vegetable oil
1 med papaya, peeled, seeded and diced
1 med red bell pepper, finely chopped
1/2 cup finely chopped red onion
1/2 cup orange juice
1/4 cup lime juice
2 tbsp chopped fresh cilantro
1/2 tsp ground red pepper
2 cloves garlic, finely chopped
5 cups hot cooked rice

Directions:
Directions:
In 2 quart saucepan, heat water and beans to boiling. Boil uncovered 2 minutes; reduce heat. Cover and simmer about 45 minutes, stirring occasionally, until beans are tender; drain.
Cook remaining ingredients except rice in skillet with oil. Stir in beans once peppers are tender.
Serve with rice.
