1 1/2 C all-purpose flour
1 C cocoa
1 tsp baking soda
1 tsp salt
1 C butter
3/4 C granulated sugar
1 1/4 C dark brown sugar
2 large eggs
2 tsp pure vanilla extract
1 1/2 C bittersweet chocolate chopped
1 1/2 C dried tart cherries
In place of dried cherries; may substitute with dried figs, cranberries, or apricots.

Heat oven 350º-F. Line baking pans with parchment paper & set aside. Combine flour, cocoa, baking soda, & salt in a medium bowl & set aside. Beat sugar & butter in another large bowl until light & fluffy, using a mixer set on medium-high speed. Beat in eggs one at a time & add vanilla. Reduce mixer speed to low & gradually add the flour mixture until combined. Stir in the cherries and chopped chocolate.(for blond Milk chocolate & cherry cookie, omit the cocoa, add an additional cup of flour, and replace the bittersweet choc. with milk chocolate). Shape 2 T. of dough into rough balls & place them 2-in. apart on baking sheet lined with parchment. Bake 11-13 min. Cool cookies on pan for 2-min. Transfer to wire rack & cool completely.
