2 white onions, chopped
1/2 cup olive oil, divided
1/2 tsp salt
2/3 cup milk
12 oz. whole milk ricotta cheese
14 oz feta, crumbled
2 tsp fresh lemon juice
1/2 cup chopped fresh dill
1/3 cup semolina
1/2 tsp pepper
6-8 sheets filo dough, thawed

Preheat oven 400 degrees with rack in lowest position. Saute onion in half of the oil, just until soft.
Whisk eggs and milk, add cheeses, lemon juice, dill, semolina, pepper and rest of oil. Stir in the onions.
Oil a 12 inch tart pan. Brush oil on one piece of filo sheet and lay in tart pan. Do this with 3 sheets. Add cheese mixture. Oil 3-4 more sheets of filo and add to the top. Pinch the sides closed. Adding oil will keep the filo workable.
Bake at 400 degrees for 50 minutes or until golden brown. Let cool 20 minutes, serve.
