1 lb. fried hamburger meat, drained
1 tsp. garlic
salt & pepper
16 oz. grated cheddar cheese
1 small onion, diced
18 corn tortillas
2 jars taco cheese sauce
2 small cans diced green chilies, undrained
2 small jars diced pimiento, undrained

Enchiladas:
Add garlic, salt, pepper, cheese, and onion to hamburger meat. Fry tortillas in hot grease or oil for just a few seconds. Roll meat mixture into tortillas. Place in large greased baking pan.

Sauce:
Mix cheese sauces, green chilies, and pimientos. Heat until warm. Pour over enchiladas. Bake at 350º for 30 minutes.

This can all be frozen and baked later for 45-60 minutes.

I use finely grated cheese for the enchiladas. Mexican 4 Cheese or Colby Jack is also good. Frito Lay or Tostito cheese sauce is good and can be found in the potato chip aisle.
