6 medium sized potatoes
6 slices of bacon
3/4 cup chopped onion
2 tbsp flour
1-2 tbsp sugar as desired
Dash of pepper
3/4 cup water
1/2 cup vinegar
1/2 tsp celery seed

Directions:
Directions:
Boil the potatoes in their skins until tender. Peel and slice thinly into a bowl. Fry the bacon until crisp. Cook the onion in 1/3 cup of the bacon grease until yellow. Mix in the flour, sugar, salt, celery seed and pepper. Stir in gradually the water and vinegar. Cook, stirring until mixture boils. Boil for one minute. Pour over the potatoes. Add the bacon, broken into pieces,( save some for garnishing). Cover and let stand until ready to serve. Heat over hot water. Serve n large bowl garnished with the leftover bacon pieces and minced parsley or chives. Can keep warm in a slow cooker.
