Juice and rind of 4 large lemons
2 level tbsp of powdered gelatine
6 eggs
8 oz of caster sugar
10 oz of double cream

Directions:
Directions:
Sprinkle gelatin over four tablespoons of water in small pan and leave to soak for 5 minutes.
- Separate eggs, yolks in large bowl and whites into another.
Grate rind from lemons and add to egg yolks with sugar.
- squeeze llemons and add juice to gelatine.
- put sausepan over low heat and stir until gelatine disolves - remove from heat.
- whisk egg mixture until pale and creamy.
-slowly pour gelatine into egg mixture, whisking all the time until mixture begins to thicken.
-lightly beat cream and fold into mixture.
-beat egg whites until stiff and then blend them into mixture evenly and lightly.
-pour into serving dish and chill until set.
-serve with, or without cream
