1 lb. Minced Beef
2 sticks celery
1 onion
1 can chicken gumbo soup
2 tbspns. ketchup
1 tbspn. yellow mustard
salt and pepper
White dinner rolls

Directions:
Directions:
Chop onion and celery and fry in heavy bottom pot with a little butter and/or olive oil until soft.
Add minced beef and cook. Add ketchup, mustard and chicken gumbo (you can use chicken and rice soup if necessary, but Roc will tell you in no uncertain terms that it is NOT the same and he's right.)
Cook mixture for about 25 minutes and serve ladeled onto while dinner rolls.

These are a variation on the traditional sloppy joes. A kind of Hearst reimagining. I didn't think I'd like them, but they're delicious and really good for lunch on a cold day. Kids love these (except for Alex of course.)
