3/4 cup butter
1 1/3 cups light brown sugar
2 eggs
1/4 cup hot water
2 cups all purpose unbleached flour
1 tspn. baking powder
1/2 tspn. baking soda
lge. pinch salt
tspn. vanilla
Strawberry jam (or another fruit if you prefer)
Directions:
Directions:
Preheat oven to 350 degrees. Grease two cookie sheets.
Cream the butter and sugar. Add the eggs, one at a time and blend well.
Mix together the flour, baking powder, baking soda and salt.
Add the vanilla and hot water to the egg mixture and mix well. Add flour mixture and mix to form creamy batter.
Drop large spoonfuls of batter onto greased cookie sheets.
Bake at 350º for 12 minutes
Cool soft cookies on a rack.
When cool, spread jam on underside of one cookie and place another cookie on top to make sandwiches.

One summer, Mimi, Alex, Eniko, Jessica and I spent an entire afternoon in the kitchen in Hearst making these cookies. They disappeared off the cooling racks before we had even filled them. We kept having to make another batch to make our quota for the day (enough cookies for us to take home a couple of dozen, for Eniko to take home a dozen or so, and to leave plenty for Mario and Roc.) It was a good afternoon and one I think we'll all remember for a long time.
