8 chicken breasts
6 potatoes
3 carrots
2 onions
2 lbs. velveeta
1 can Rotel
picante sauce

Directions:
Directions:
Boil 8 chicken breasts in 2 qts. water or use extra chicken broth - 15 minutes. Remove chicken and cool. Add potatoes, carrots, and onions. Cut in 1/3 to chicken stock and cook til done - approximately 20 minutes. Use strainer and remove vegetables - puree potatoes, onions, and about half the carrots. Add to stock - puree other carrots and mince. Add to stock. Cut chicken in 1 inch cubes and add. Add 2 lbs. velveeta, 1 can Rotel, and any other picante sauce tos tatse.

To thin add boullion cubes and water. To thicken add instant mashed potatoes.
