2 - 8 oz pkgs Cream Cheese
1 lb pkg Creamed Cottage Cheese
1 1/2 C. Sugar
4 Eggs
3 T Flour ~ 3 T Cornstarch
1 1/2 Tsp Grated Lemon Rind
1 Tsp Vanilla
1/2 C Butter, Melted
1 Tsp Lemon Juice
1 Pint Sour Cream

Preheat oven to 325º. Grease a 9" spring form pan, set aside. In large bowl of mixer, beat the cream cheese with the cottage cheese at high speed until well combined. Gradually beat in sugar, then eggs one at a time. At low speed beat in the cornstarch, flour, lemon juice, lemon rind & vanilla. Add the melted butter & sour cream. Beat just until smooth. Pour into the greased pan, bake one hour & 10 minutes or until brown around the edges. Turn off the oven and let the cheesecake stand inside for an additional two hours. Cheesecake can be cooled at the point and dressed with topping of choice.

A delightful cheesecake, I prefer to keep quiet about the cottage cheese ingredient (secret). Super with fresh strawberries or homemade spread.
