Pie Crust:
1/2 c. butter
1 t. vinegar
2 T. sugar
1-1/4 c. all purpose flour

Filling: 2 T. all purpose flour
8 plums or 7 peaches
3/4 c. sugar
1 tsp. cinnamon
2 eggs beaten

Crust:
Melt butter. Add vinegar, 2 T. sugar, and 1-1/4 c. flour. Mix well. Lightly press in 8"-9" pie pan. Bake at 400º - 10 minutes.

Filling:
Sprinkle 2 T. flour in baked crust. Arrange plums/peaches in circles with pieces overlapping on flour layer. Combine sugar and cinnamon. Sprinkle over fruit. Spoon eggs on sugar mixture. Bake at 400º for 30 minutes. Serve with vanilla ice cream topping, sour cream mixed with small amount of cinnamon or mixture of 1/2 sour cream and 1/2 whipped cream.
