1/2 c. minced fresh cilantro
1/4 c. dry white wine
1/4 c. soy sauce
2 (1/4 inch) slices fresh ginger root, peeled and minced
1/4 c. lemon juice
1/8 c. olive oil
6-8 salmon steaks
1/2 c. fat-free mayonnaise
3-4 minced green onions
2 T. anchovy paste
1 clove garlic, minced
1/2 c. fresh cilantro, finely minced
3/4 c. fat free sour cream
1 tsp. Dijon mustard
Zest of 1 lemon
2 T. lemon juice

Directions:
Directions:
Combine cup of chopped cilantro with the white wine, soy sauce, minced ginger, 1/4 cup lemon juice and teh olive oil. Spread over the salmon steaks and let it stand in a covered dish for at least 2 hours in the refrigerator. Turn the salmon halfway through the marinating time to make sure both sides of the steaks are well seasoned. To make the sauce for the fish, simply combine all of the remaining ingredients, belnding well. Just before you are ready to serve, place the salmon on a pre-heated hot grill and grill for 10 minutes per inch of thickness. Serve the salmon hot, accompanied by some thinly sliced fresh cucumbers, and tomatoes and a dollop of the cilantro sauce.
