1tbsp olive oil
1 med onion
2 gloves garlic
4 med potatoes
1 large bunch fresh Broccoli
chicken or vegetable stock to cover (low sodium)
pinch of nutmeg (optional)
¼ cup of half and half (or milk)
Shredded old cheddar cheese

Dice onion and garlic. Sauté in olive oil till translucent in a decent sized soup pot.
Peel and dice potatoes. Add to pot. Cover with Chicken stock. Bring to boil and simmer for 10 minutes. Add chopped broccoli. Simmer another 10 minutes or so. Add ground nutmeg. Remove from heat once potatoes and broccoli are tender. Blend with a hand blender or in batches in a regular blender until smooth. Add half and half or milk. Heat through. Salt and pepper as desired, serve with a bit of shredded old cheddar cheese on top!
