Ingredients: 1 lb. provolone cheese thin
1/2 cream cheese pkg.
1/2 lg tube pkg. goat cheese
1 cup pesto- 1lg bunch basil or 2 small pick off the leaves and throw away the stems rinse and dry, put in food processor and add 1/2 -3/4 cup pine nuts, 1/2 - 1 cup parmesan cheese, salt and pepper and 2 cloves garlic, and 1/2 cup to 3/4 cup olive oil and blend until smooth
1 cup sundried tomoto spread or pesto ( use pkg sundried tom. and add 1/2 cup olive oil, salt and garlic and put in food processor to blend

Directions:mix together cream cheese and goat cheese and set aside. Prepare pesto or use pre-prepared. Prepare sundried tomato spread or use pre-prepared. Take a med - small size bowl and spray it with Pam. Line the pan with the provolone cheese. Put in the cream cheese mixture and spread it evenly and cover it with provolone cheese and then put on the pesto and cover with provolone and then put on the sundried tomato spread. Then fold over the sides of the provolone and cover any open space with provolone and cover it with plastic wrap and put it in the ref. for about 2 hrs. serve with garlic toast bread or crackers or whatever you like. |

For those allergic to nuts, leave the pine nuts out of the pesto recipe and use more cheese.
