2 C whipping cream
2 T. powdered. sugar
1 tsp vanilla extract
1 C mint candies - crushed
1 9 oz. pkg. chocolate wafer cookies ( 40 wafers)

Directions:
Directions:
In large bowl, combine whipping cream ,powdered sugar & vanilla extract; beat until stiff peaks form. Fold in crushed candies.On one side of each of 7 choc. wafers, spread 2 tsp. whipped cream mixture. Stack wafers on top of each other. Top stack with plain wafer. Repeat until all wafers are used, making 5 stacks of 8 wafers each.
Turn each stack on its side; place stacks side-by-side on serving platter, form 11 x 3-in. rectangle. Frost rectangle with remaining whipping cream. Cover; refrigerating at least 5 hours or until wafers are soft.
