4 chicken boneless breasts
1 (16 oz.) pkg. spaghetti (I like angel hair pasta)
2 ribs of celery, chopped
1 onion, chopped
1/4 c butter or margarine
1 (10 oz.) can tomatoes and green chilies, chopped
1 (10 oz.) can cream of chicken soup
1 (10 oz.) can cream of mushroom soup
*8 ounces Velveeta cheese, cubed
***I use the entire large block of Velveeta Cheese,
because cheesier the better:)
1 tsp. garlic salt
1 tsp. Creole seasoning

Rinse the chicken. Combine chicken with salt in enough water to cover in a saucepan. Cook until tender. Chop chicken into bite size pieces. Cook spaghetti using package directions. Preheat oven to 350 degrees. Saute the celery and onion in the butter in a large skillet., Add the tomatoes/green chilies, soups and cheese. Cook until the cheese is melted, stirring occasionally. Add the garlic salt and Creole seasoning. Stir in the chicken and spaghetti. Pour into a 9 by 13 inch baking dish. Bake for 30 minutes.
