1/2 tsp dried thyme
1/2 tsp ground black pepper
1/4 tsp salt
1/8-1/4 tsp ground red pepper
2 tbsp butter
1 smoked ham steak (6 oz)
5 skinless, boneless chicken thighs (or breasts), cut up into pieces.
1 c. chopped cooked sausage
1 1/2 large onions, chopped
1 large green bell pepper, chopped
3 cloves garlic, minced
1 c. canned crushed tomatoes
1 1/2 c. chicken broth
1-1 1/2 c. instant rice.

In a small bowl, combine the thyme, black pepper, salt, and red pepper.

Melt butter in a large pan. Add the ham, chicken, and sausage and cook until lightly browned, stirring occasionally, about 5 minutes. Sprinkle the spice mixture over the meat and stir to combine. Add the onions, bell pepper, and garlic. Reduce the heat to medium and cook, stirring frequently, until the vegetables start to soften, about 5 minutes. Stir in the tomatoes and cook for 1 minute. Stir in the broth and rice. Bring to a boil and simmer covered for about 5-10 minutes, until rice is done.
