1 lb crawfish tails
1 stick of butter
¼ cup green onions, chopped
1 cup white onions, chopped
1 can cream of mushroom soup
1 small can evaporated milk
1 tbsp corn starch
Red pepper and salt to taste
18 to 24 small Bama pie shells

Directions:
Directions:
Preheat oven to 350 degrees. Sauté the white onions in butter. Add can of cream of mushroom soup. Blend the cornstarch in the evaporated milk first, then add to the mixture. Sauté until everything is well blended. Add green onions, crawfish and seasoning (salt and pepper or Tony’s seasoning, “I use Tony’s”) Continue to sauté for approximately 10 more minutes. Total cooking time will be about 20 minutes. Fill pie shell with mixture. (If making large pie, cover with other pie shell and slit the top). Place in oven and bake for 30 minutes or until golden brown. One pound will make approximately 18 to 24 small pies. “I use Bama frozen pie shells which come 8 to a box.”
