8 baby squash, Sweet dumpling) or 4 acorn squash.
2 T. extra virgin olive oil+more for brushing
1 tsp. salt + extra to sprinkling
10 C 1/2" cubes peeled, squash
4 T. unsalted butter =1/2 stick
3 C. onion, chopped)
1/2 C. chicken broth
1/3 C. dried currants
1 T. grated orange peel
1 T. thyme,chopped
1/2 tsp. cinnamon

Preheat oven 425ºF Cut off top 1/2" of squash, reserve tops. Cut each squash in half crosswise, scoop seeds & strings out. Brush inside squash with oil. Sprinkle with coarse sea-salt & pepper. Place squash, cut side down, on large rimmed baking sheet. Roast about 20-min. for small size squash & 30 min. for larger ones. Turn squash, cut side up. Toss cubed squash in large bowl with 2 T. oil, coarse salt, & pepper. Spread on baking sheet, bake about 45 min. Turn over 1/2 way thru the cooking time. In heavy skillet, melt 2 T. butter then add onions, saute until golden (12-min.) Transfer to large bowl. Add 2 T. butter & broth to skillet; stir until butter melts. Add to onions, then mix in thyme, currents, orange peel & cinnamon & 1 tsp. sea salts. Mix in cubes of squash, season with pepper. Spoon filling into squash; place tops securely on squash. Arrange on large sheet & bake 30 min. 375º F.. Remove the tops; then continue baking for 15 min. longer. Let cool (10-min.) before transfer to platter.
