5 pounds Russet potatoes, peeled
1 (8oz.) pkg cream cheese, softened
1 cup sour cream
2 tsp. garlic salt (can use table salt if you don’t want garlic
potatoes)
½ tsp. pepper
4 tbsp. margarine (I use parkay)

Directions:
Directions:
Cut potatoes into quarters. Cook until tender, then drain and mash well. In a small bowl, beat cream cheese and sour cream until fluffy; gradually beat into mashed potatoes until mixture is smooth. Add garlic salt or (table salt) and pepper; mix well. Turn into a buttered shallow 3 to 4 quart baking dish. Dot with butter and sprinkle with paprika.
At this point, you may cover and refrigerate up to three days. Bring to room temperature before baking. Bake, covered, at 400 degrees for 60 minutes or until heated through. Serves 12 hungry people.

I double this recipe for 20 people and there are leftovers to send home. Don’t forget to take them out in the morning to bring to warm temperature. I forgot this one year! When I double this, I make the recipe twice. Otherwise it is to much for the mixer.
