2 10oz. pkgs. frozen chopped spinach, thawed
1 1/4 cups chopped onion
2 cups lowfat cottage cheese, well drained
1 cup crumbled feta (4oz)
1 cup egg whites or 8 oz carton egg product
1/3 cup quick cooking rice (white or brown)
2 tsp. dried basil, crush
1/4 tsp. salt
1/8 tsp. ground nutmeg
1/8 tsp. pepper
nonstick cooking spray
3 sheets (sometimes I use more) frozen phillo dough (18 x 14 inch rectangles)
2 tbsp butter, melted

Directions:
Drain frozen-thawed spinach in a colander, pressing with a spoon to drain out extra liquid. Set aside.

In a small skillet, place the onion and a bit of water. Cover & let the water boil until the onion is crisp & tender. Drain.

In a large mixing bowl: combine spinach, onion, drained cottage cheese, feta, egg, uncooked rice, basil, salt, nutmeg, & pepper.

Spray a 13 x 9 x 2 inch baking dish (pan) with cooking spray. Spread the spinach mixture in the pan. Place one sheet of phyllo dough on top of the mixture. Spray sheet w/ cooking spray. Place another sheet of phyllo dough on top & spray with cooking spray again. Once you have the desired amount of phyllo layers, brush the top with 2 tbsp of melted butter.

Bake in 375 degree oven for 40-45 mins or until golden brown. Let stand for 5-10 mins before cutting.

Makes 8 main dish servings.

This is a high-maintenance recipe, so plan to make it when you have time. But it's really wonderful. It freezes well and can serve as either a casual or entertaining-worthy dish.
