1/4 c. All Bran cereal
1/2 c. oats
1/4 c. pure pumpkin
1/2 c. cottage cheese
6 T egg whites
Liberal use of cinnamon and nutmeg, some ginger, cloves, or allspice (whatever pumpkin pie spices you have)
a bit of honey, maple syrup, or sugar to taste

Blend the ingredients (I use my food processor) and cook like regular pancakes.

I consider this to be a healthy staple instead of a breakfast for entertaining. They're excellent, very filling, lots of good healthy nutrients, and they freeze well. You can play with the recipe by adding walnuts or flaxseed.
