1c. bulgur*
2 c. diced cucumber
1c. chopped fresh parsley
1/2 c. finely chopped red onion
1/2 c. crumbled feta cheese

Dressing
2 cloves garlic, minced
1/4 c. lemon juice
1/2 tsp. salt
1/4 c. olive oil
pepper

Soak bulgur in 6 cups hot water for 1 hour; drain.
In bowl ,combine bulgur, cucumber, parsley, onion and feta.

Dressing: In small bowl , combine garlic, lemon juice and salt; gradually whisk in oil. Season with pepper to taste.
Pour over salad; stir to mix.

Once bulgur is soaked only 10-15 min.

* If you cannot find bulgur and want to use cracked wheat instead, follow package instructions for cooking cracked wheat. This salad is good any time of the year for packed lunches, a buffet, or with barbecued chicken, meat, or fish. Make ahead if you like: Salad can be covered and refrigerated for up to two days. Stuff tomatoes with it if you like: Cut tomatoes in half, scoop out seeds and some pulp and fill hollow with Bulgur Salad....delicious!
