1 packet active yeast
1/4 c. warm water
1 c. butter
4 1/2 to 5 c. sifted flour
3 eggs--warm and slightly beaten
1 c. evaporated milk
1/4 c. sugar
1 tsp salt
1 tbsp oil
1 1/4 lb cooked bacon (undercooked)

Soften yeast in 1/4 c. warm water. Set aside. Cut 1 c. butter into 3 cups sifted flour until particles are the size of large peas. Add 2 slightly beaten eggs, evaporated milk, sugar, salt, and yeast--mix well. Add oil and gradually add 1 1/2 to 2 c. sifted flour to form a stiff dough. Mix well after each flour addition. Cover and chill 2 to 3 hours. Divide chilled dough into 5 parts. Roll out 1 part on floured surface to a 9-inch circle. Cut into 8 wedges using pastry wheel or knife. Put one teaspoon ground bacon on each wedge. Roll wedge starting with wide end and rolling to point. Tuck in the outer edges. Place point-side down on greased baking sheet. Repeat process with remaining portions. Let rise in warm place until light and double in size--about one hour. Brush with beaten egg. Bake in 375º oven for 15 to 18 minutes until golden brown. Let sit on cookie baking sheet to soak up bacon grease.
