4 sole fillets
1/4 C. all-purpose flour
1/2 tsp. salt, 4 1/2 T. unsalted butter,
1 lemon, ends trimmed, 2 T. capers, rinsed & drained.



Directions:
Directions:
Place flour on a plate. Season the sole with salt & then coat it in flour, shaking to remove any excess; set aside. Melt 1 T. butter in large skillet over medium heat. Slice lemon into 12 thin circles & add them to the skillet. Cook until lemon is lightly browned, about 2 min. Push lemon to the side of skillet & add sole. (You may need to cook it in batches.) Cook until sole is same color throughout & flakes easily, about 2 min. per side. Add remaining butter & capers to the skillet. Remove from heat & tilt skillet to swirl butter until it melts. Transfer the sole & lemon to individual plates & spoon the capers & butter over the top.
