Humming Bird Cake Recipe

3 cups of all purpose flour
2 cups of sugar
1 teaspoon of salt
1 teaspoon of baking soda
1 teaspoon of cinnamon
3 eggs beaten
1 1/2 cup of salad oil
1 1/2 teaspoons of vanilla
1 8oz can of crushed pineapple (undrained)
1 cups of chopped pecans
2 cups of chopped banannas

Cream Cheese Frosting
2 8oz packages of cream cheese softened
1 cup of butter or margarine softened
2 16oz packages of powdered sugar
2 teaspoons of vanilla

Combine dry ingredients in a large bowl. Add eggs, and salad oil. Stir until dry ingredients are moistened (DO NOT BEAT). Stir in vanilla and pineapple, 1 cup of pecans, and the banannas. Spoon batter into three well greased and flowered 9 inch round cake pans.Bake at 350º between 25 and 30 minutes or until the cake is cooked.

Cream Cheese Frosting:
Combine cream cheese, powdered sugar and butter until smooth. Stir in vanilla until smooth.

Spread frosting between layers, on top and sides of cake. Sprinkle with pecans.
