Sweet onions (Vidalia, Maui, Walla Walla)
1 tablespoon oil or a mixture of equal parts of oil and butter

To caramelize onions, heat a skillet on low heat with oil. Thinly slice onions and add to skillet. Stir to coat onions with oil. Stir to coat onions with oil. Stir onions frequently to get uniform caramelization. Watch carefully because the sugar in the onions will burn quickly. Slow cooking over heat is important. This process could take up to 20 minutes, depending on amount of onions. These freeze well.
