6 medium potatoes = (2 lbs.), 2 stalks celery, 1 medium green pepper, 1/3 C. onion, 1 1/4 C. sour cream or mayo (as substitute); 1 T. vinegar, 2 tsp. mustard, 1 tsp. salt, 1/2 tsp. pepper, 6 hard boiled eggs.

Boil potatoes in water for 2 min. or until just tender. Drain well, peel and cube. In a large bowl combine celery, chopped and green pepper, onion, chopped, sour cream or mayo; vinegar, mustard, salt & pepper. Add potatoes and eggs. Dice the last two ingredients. Toss lightly to mix. Cover & chill for 6 hours.
