3 large green peppers.
3 large Spanish onions.
1 clove of garlic.
1 bunch of cilantro.
10 little colorful peppers (they are small and look like little pumpkins and come in yellow and orange) make sure they are not the HOT ones.

Do not add water or oil.

In a food processor or blender. The speed should be on blend. You may have to make a bunch of small batches and then add them all into one Large bowl and mix it all together by hand. Unless you have a large processor or blender then add everything a little at a time in the blender and let the blender mix all the ingredients. You can fill them up in small containers and freeze some and leave one in the fridge no more then one month. You can keep them in the freezer for up to six months. To defrost just put container in the fridge the night before.
When adding to food processor or blender, to prepare chop up all green peppers( no seeds).
Chop all onions garlic and cilantro, the little peppers do not need to be chopped up. (Remember the little peppers should not be the hot ones).

Just add a little of each ingredients at a time into the processor as you go along and pour it into the large bowl and keep repeating it till everything is blended and in the large bowl.
By hand mix everything together well and store away till needed.

When using the sofrito for the beans or as a marinate only use (1) large table spoon the first time, or more as you go along the next time you make it.
