For shell/crepe:
2 cups flour
1 pinch of salt
6 large eggs (room temp)
1 stick butter (for greasing pan)
4 oz water (maybe more)
wax paper

For filling:
32 oz ricotta
12 oz grated Romano cheese
2 tbl fresh parsley chopped
6 eggs room temp
1 tsp salt
1 tsp pepper

2 lb mozzarella cheese cut into pinky thin strips

Directions:

For shell/crepe:
combine all ingredients (minus butter) together until consistency is creamy (little thinner than pancake batter)
in non-stick skillet over medium heat grease lightly ladle in 2 oz approximately into pan
flip when edges of crepes creep up on edges then move to wax paper
repeat about 30 or so times until batter is done

For Filling:
beat eggs then combine all rest of ingredients and mix until evenly distributed

To assemble:
in middle of crepe place one heaping tbl of filling and put one piece of mozzarella in middle
then fold up sides right, middle then leftplace into baking pan lined with sauce.
repeat and arrange with manicotti's side by side
drizzle sauce on top

Bake at 350º F for 35-40 minutes (keep checking so it doesn't burn)
