CHICKEN with YOGURT and GRAPES Recipe

2 Tbsp margarine or butter
1/2 cup milk
1/2 cup flour, mixed with salt and pepper
2 to 2.5 lb. chicken breasts
8 oz. plain yogurt
1 Tbsp good quality chicken base, like LeGout brand
2 cups white seedless grapes
1 (10-15 ounce) can Mandarin oranges, drained
toasted, slivered almonds to taste

1) Melt butter in large saute pan.
2) Dip each chicken cutlet in milk, then flour.
3) Brown chicken in melted butter.
4) Remove each piece of chicken once it is browned to plate that is on keep warm in the oven.
5) When all chicken is browned, add yogurt to drippings in your saute pan; stir up all the good crunchy bits with a wooden spoon. You've got to kind of stir in a whipping motion to get the yogurt incorporated in the butter and chicken juices. Add the chicken base to taste as needed.
6) Return chicken to saute pan, and pour any drippings on the plate into the pan also.
7) Cook on very low heat until chicken is done---shouldn't take too long---maybe 10 minutes. You will want to turn chicken over a bit, and make sure each piece is getting coated as it cooks in the sauce.
8) When chicken is done, add grapes to chicken and yogurt mixture. Heat until grapes are heated through.
9) To serve, layer: rice, chicken, yogurt sauce and grapes. Sprinkle with a few drained Mandarin oranges and some toasted almonds.

This was a favorite of Don's and Uncle Steve's. Steve would ask me to make it every time he came to visit. If memory serves, when it just didn't look like I had enough sauce, I'd add some light sour cream to the yogurt mixture.
