1 1/2 lbs. fresh beets
2 medium oranges
3 T. brown sugar
1 T. cornstarch
1/4 tsp. salt & dash pepper
2 T butter or margarine

Directions:
30-40 min. covered with water, in 6 qt. pan
Cut off all but 1" of beet stem and root. wash & scrub with brush; do not peel. Cook beets, covered, in boiling water till tender, about 40 min. for medium-sized beets. Drain, reserving 1/3 C. of cooking liquid. Peel beets; cut in 1: pieces. Peel & quarter oranges, discard seeds. Put orange in blender container, blend till pureed. Add brown sugar, cornstarch, salt, pepper & half of the beets to orange in blender, turn on & off quickly till beets are coarsely chopped. Pour into saucepan. Repeat with reserved cooking liquid & remaining beets. Add to saucepan along with butter. Cook & stir till thickened & bubbly; cook 2 min. longer.
