3 qt. water
1 qt. vinegar
1 c. salt
1 tbsp. alum, optional

Wash pickles, which should be dill size; place in a 3 gallon crock with some dill in bottom and some on top. Bring to a boil water, vinegar, salt and alum; pour over pickles. A few pickling spices may be added if desired. Place plate on top of crock and weigh it down. May have to make 1 1/2 recipe of the brine to completely cover pickles. Takes at least a week for the pickles to become dill depending on their size.
