3 medium zucchini squash
24 saltine crackers unsalted
1 egg
2 oz. cheddar cheese
1 slice onion
1/2 jar pimiento
2 sprigs parsley
1/2 tsp. salt, dash pepper
1 T. butter or margarine

350º bake 30 -35 min. Pyrex Pan, oiled
wash zucchini; cut off ends. Cook in boiling water for 5 min. Halve zucchini lengthwise; scoop out pulp & reserve. Put half the crackers in blender container; blend on coarse crumbs. Repeat with remaining half of crackers. Pour into bowl, reserving 1/4 C. Place zucchini pulp, egg, cubes of cheese, onion slices, pimiento, parsley, salt & pepper in blender container; blend until coarsely chopped. Stir into crumbs. Toss reserved crumbs with butter; sprinkle over top.
