8 pork chops cut 1 1/4 inch thick and pocketed for stuffing (can be done by a butcher)
salt and ground pepper to taste
2 c dried bread crumbs
1 c finely chopped red apples
1 c shredded cheddar cheese
1/4 c light raisins
1/4 c butter, melted
1/4 c orange juice
1/2 tsp. salt
1/4 tsp. cinnamon

Directions:

1. Sprinkle salt and pepper on all sides of pork chops.

2. Combine all of the stuffing ingredients in a medium bowl, mix well.

3. Stuff evenly divided mixture into pockets of each pork chop. Seal with one to two toothpicks each.

4. Bake at 350ºF for 1 1/2 hours.

We would often enjoy these stuffed pork chops for special occasions, usually on Christmas or New Year's Day. This recipe can easily be cut in half to reduce servings.
