30 saltine cracker squares
1/2 cup melted butter
3 cups thinly sliced onions
1/4 cup butter
1/2 pound shredded sharp cheddar cheese
1 1/2 cups scalded milk
3 beaten eggs
1/2 teaspoon salt and pepper

Directions:
Directions:
Crush saltine crackers and mix with 1/2 cup butter. Press into bottom of a 9 inch pie plate. Saute onions in 1/4 cup butter until clear ans soft. Put these on top of the cracker crumbs. Sprinkle cheese on top of onions. Mix together scalded milk, eggs, salt and pepper. Pour mixture over the onions and cheese. Bake at 350º for 30 minutes or until set.

This is just a quiche basically. It's intimidating to some because of the name but this is a savory pie, not a sweet one. It's absolutely wonderful.....cheesy with a soft hint of onion.
