8 manicotti shells
1 lb ground beef
chunky spaghetti sauce
2 beaten eggs
3 c ricotta or cottage cheese
3/4 c parmesan cheese
1/4 tsp salt
dash of pepper
1 tsp parsley

Directions:
Directions:
Cook manicotti shells as directed - rinse in cold water - drain. Brown ground beef - drain. Add spaghetti sauce and heat to a boil - reduce heat and simmer 10 minutes. In bowl, combine eggs, ricotta cheese, 1/2 c parmesan cheese, salt, pepper and parsley. Stuff shells with cheese mixture. Pour 1/2 of meat mixture into baking dish. Top with stuffed manicotti. Top with remaining meat mixture. Sprinkle with parmesan cheese. Bake uncovered at 350º for 45 minutes. Let stand 10 minutes before serving.
