1 cup sugar
1/3 cup all purpose flour
1/4 tsp. salt
2 cups milk
6 T cocoa plus 2T. butter or 2 1oz. squares unsweetened baking chocolate
3 slightly beaten egg yolks
1 9-inch baked pastry shell
Whipped topping

Butterscotch Pie
Delete the chocolate.
Substitute brown sugar for granulated sugar and increase butter to 3 T.

Vanilla Cream Pie
Delete the chocolate
3/4 c of granuled sugar


Coconut Cream Pie
Delete the chocolate.
Add one c. flaked coconut to vanilla cream recipe

In saucepan, combine sugar, flour and salt: gradually add in milk. cook and stir over medium heat untill bubbly. Cook 2 minutes longer. Remove from heat. Stir a moderate amount of hot mixture into egg yolks; immediately return to hot mixture; cook 2 minutes, stirring constantly. Remove from heat. Add Butter and vanilla. Pour into cooled baked pie shell. Either spread with meringue and bake 350 for 12 minutes and let cool. Or don't use meringue and serve with whipped topping.
