1 tsp. extra virgin olive oil
2 cloves garlic, minced
6 oz boneless, skinless chicken Breast, cut into quarter-inch-wide strips
1/2 cup frozen green peas, thawed
1/2 cup thinly shredded carrots
1/2 cup low-sodium chicken broth
2 Tbsp. reduced-fat cream cheese
2 cup cooked bow-tie pasta
3 Tbsp grated Parmesan cheese
1/2 tsp grated lemon rind
1/8 tsp. salt
1/8 tsp. pepper
Fresh chives
Nonstick cooking spray

Coat a large skillet with nonstick cooking spray; add olive oil. Place over medium-high heat until skillet is hot. Add garlic, saute 15 seconds. Add chicken, cook one minutes. Add peas and carrots, cook one minute. Remove chicken mixture from skillet and set aside.

Add broth and cream cheese to skillet; cook over medium-high heat for three minutes or until the cheese melts, stirring constantly with a whisk. Stir in chicken mixture, pasta, Parmesan cheese, lemon rind, salt and pepper. cook one minute. Garnish with chives
