1 pork loin rib crown roast – about 10 pounds
Chicken stock

Herb Rub
1 cup chopped parsley
¼ cup Dijon mustard
2 T olive oil
2 T lemon juice
2 tsp dried thyme or 1 T fresh
2 tsp rubbed sage
2-3 garlic cloves
Salt and pepper to taste
(Puree in blender or food processor)

Rub mixture thoroughly over surface of room temperature roast. Place on rack and pour enough stock in pan to cover. Roast in 325 degree oven until meat thermometer registers 160 degrees (about 2 to 2-1/2 hours). Check stock and add as required. When roast is done, remove from the oven and tent with foil for at least 20 minutes. Deglaze roasting pan with red wine. Make a mixture of stock and flour and add as needed to make gravy.

Other tips:
Ball up some foil and place in center of roast during cooking to preserve shape. Remove while roast is resting.

Leave frenched tips uncovered for the first 30 minutes of roasting. Cover with foil for the remaining cooking. Discard and up butcher caps if desired for serving.
