1/2 c. butter
1/2 c. brown sugar
3/4 c. white sugar
1/2 tsp. vanilla
1 egg
2 c. flour
1/4 tsp. baking soda
dates(7oz box or 230 g), pitted, chopped
1/4 c. sugar
1/3+ c. water
pinch salt
1 c. walnuts

Cream butter, 1/2 c. brown sugar, 3/4 c. white sugar, vanilla, egg; mix in flour and soda. Chill enough time to roll (30 minutes) Simmer dates, 1/4 c. sugar, 1/3+ c. water, and salt for 5 minutes. Mix in nuts. Cool. Halve dough and roll out each half onto floured wax paper into 9x12 rectangle. Spread 1/2 date filling onto each dough rectangle, using wet knife or fingers. Roll up tightly from either end, depending on size and number of cookies desired. Rolling up from long side gives 90 cookies. Chill in wax paper. (I use the freezer for 1/2 hr.) Slice 3/8 inch and place on lightly greased cookie sheet. Bake 350°F for 5-10 minutes. Watch, for these will brown fast! Serve to grown-ups who will appreciate the work behind such a delectable cookie! Makes 6-8 dozen.
