3/4 c. butter
1/2 c. white sugar
1/2 c. brown sugar
1 egg
1/4 c. molasses
2 1/4 c. flour
2 tsp. baking soda
1/2 tsp. salt
2 tsp. cinnamon
2+ tsp. ginger

Directions:
Directions:
Cream together butter and sugars. Beat in egg and molasses. Combine dry ingredients and add to creamed mixture. Roll into large balls (3.5 cm), dip top surface into sugar. Bake on slightly greased sheets until flat and surface ‘cracks’ 6-8 minutes; longer if ‘crunch’ is desired. Cool on rack. Yuhhhhmee!

Note #2 - for easier handling, form the dough into one or
two long logs right on the counter top and wait10 min.
before cutting into pieces and forming into balls.
