Pumpkin Roll Recipe

3 eggs beaten
2/3 cup pumpkin
3/4 cup flour
2 tsp cinnamon
1 tsp ginger
1/2 tsp nutmeg
1/2 tsp salt
1 cup sugar
1 tsp lemon juice
1 tsp baking powder

4 T. butter
8 oz cream cheese
1 cup powdered sugar
1/2 tsp vanilla

Beat ingrediants together, and beat well, and i mean it! Pour into greased and floured jelly roll pan. Bake at 375 for 15 minutes. Remove from oven, loosen the edges, invert onto a powdered sugared tea towel. Roll from long edge, let cool. Unroll and spread icing and reroll. Chill and slice.
