Ingredients: 4 Croissants, sliced horizontally 2 ounces cream cheese 8 eggs
Mornay Sauce
2 tablespoons butter 2 tablespoons grated Parmesan cheese 2 tablespoons all-purpose flour 1/2 teaspoon Dijon-style mustard 1 1/2 cups milk 1/4 teaspoon salt 1/4 cup (1 ounce) shredded Cheddar cheese 1/8 teaspoon pepper

Directions:Mix eggs and cream cheese thoroughly with mixer or in blender. Set aside. Melt butter in medium saucepan over medium heat. Add flour; stir until bubbly. Gradually stir in milk. Cook, stirring constantly until mixture comes to a boil and continue cooking until thickened. Stir in cheesed, mustard, salt and pepper. Remove from heat and continue until cheese melts.
Scramble eggs stirring constantly until softly scrambled. Open croissants, on bottom of each croissant put a large spoonful of eggs and top with a tablespoon full of Mornay sauce. Top with remaining croissant half and drizzle a teaspoon of Moray sauce over the top. |
