1 bottle of spaghetti sauce
1 box of manicotti
16 oz cottage cheese
1/2 c Parmesan cheese
10-14 oz mozzarella cheese, shredded
2 eggs
5 oz frozen chopped spinach

Directions:
Directions:
Cook pasta as directed on package and drain. Thaw and squeeze moisture from spinach. Mix all ingredients together. Stuff pasta with mixture and put in 9x13 baking pan. Pour spaghetti sauce over top. Bake at 350º for 30-40 min (or until done).

Mom had us each pick a night and make dinner when we were growing up. I found this recipe in an Amish cookbook of hers and it became one of my signature dishes. Enjoy!
