2-1/2 C. of corn
1 stick of butter
3-4 oz. of cream of cheese
1 can of green chilies - or more if desired
1/4 C. of milk

Heat corn up in the microwave for about 6 to 7 minutes. Add in the rest of the ingredients and mix together. Cook an additional 6 minutes or until hot, stirring ever so often to mix the cheese up well.

When Amber was born, this along with the Texas Cream Pie recipe became quick family favorites. The original recipe called for it to be made in the oven in a casserole dish, but with young kids and a microwave, I quickly changed the recipe to being made in a microwave. This is a quick,easy dish that I've used several times when I've needed to take a dish to a dinner and wanted something not everyone brought. It's also great to make at home for dinner since it's quick and easy to make for a smaller crowd if you needed. Real green chilies or frozen chilies an be substituted for canned.
